1 bn Beets (45)
One fourth cup Feta cheese (I like more)
One half A lemon ; juice of
Olive oil
Fresh dill chopped
1. Cook the beets in boiling water until just tender (not mushy) 2. Remove
skins and cut into small cubes. 3. Place in a bow, drizzle with olive oil
(not too much), lemon juice and dill to taste; toss. 4. Sprinkle with
crumbled feta cheese and serve.
The contrast between the sweet beets and the salty feta is awesome ! Posted
