1 cup Crisco oil One half cup butter, melted 3 x lrg eggs 2 cup sugar 2 One half cup flour 2
teaspoon cinnamon 2 teaspoon baking soda 1 teaspoon salt 2 teaspoon vanilla 1 cup Harvard beets One half c
creamed cottage cheese 1 cup crushed pineapple, drained 1 cup chopped nuts 1/2
cup coconut Mix together oil, butter, eggs, sugar. Add in flour, cinnamon,
soda, salt. Fold in vanilla, beets, cottage cheese, pineapple, nuts and
coconut. Pour into 9x13 inch pan. Bake at 350 for 4045 minutes. Serve
