2 teaspoon Vegetable oil
4 teaspoon Curry powder
4 teaspoon Minced fresh ginger
1 tablespoon Minced garlic
1 pound Lean ground beef
1 One half teaspoon Salt
4 cup Cauliflower florets
3 cup Finely chopped zucchini
1 pack Frozen peas; 10 oz
1 cup Chicken broth
1 pound Gnocchi; cooked according to
; package directions
One half cup Chopped fresh mint
Heat oil in large skillet over mediumhigh heat. Stir in curry powder,
ginger and garlic; cook 30 seconds. Stir in ground beef and salt; cook,
stirring, until browned. Add cauliflower, zucchini, peas and chicken broth.
Cover and cook until vegetables are tender, 10 minutes. Toss with hot
gnocchi and mint in serving bowl. Makes 6 servings.
