1 One fourth pound Ground beef or ground turkey
1 One half tablespoon Chili powder
One half teaspoon Ground cumin
1 10 ounce pkg frozen chopped
spinach; thawed and drained
1 One fourth cup Chunky salsa
1 cup Cheddar cheese; shredded
8 md Flour tortillas; warmed
In large nonstick skillet, brown ground beef over medium heat 1012 minutes
or until no longer pink, stirring occasionally. Pour off drippings. Season
beef with chili powder, cumin and One half teaspoon salt and One fourth teaspoon
pepper. Stir in spinach and salsa; heat through. Remove from heat; stir
in cheese. Spoon One half cup beef mixture in center of each tortilla. Fold
bottom edge up over filling; fold sides to center, overlapping edges.
