Recipe - Beef Hominy And Bean Soup

One half pound Ground round; crumbled
2 Cloves garlic
1 md Onion; finely chopped
2 tablespoon Fresh parsley; finely
chopped
1 tablespoon Cilantro; finely chopped
One half teaspoon Dried whole thyme
4 cup Beef broth
16 ounce Canned pinto beans; rinsed
and drained
16 ounce Canned hominy; rinsed and
drained
Salt and pepper; to taste
FOR GARNISH
Onions; cut or sliced up thin
Jalapenos; cut or sliced up thin
Fresh cilantro; finely
chopped
Brown ground round in lightly greased skillet. Add garlic and onion and
cook until onion is lightly browned. Add parsley, cilantro, and thyme and
mix.
Transfer beef mixture to a soup pot. Add beef broth, pinto beans, hominy
and salt and pepper. Bring mixture to a boil; reduce heat and simmer for
30 minutes.
Serve with garnishes.
