Recipe - Beef Zucchini Casserole

4 cup Thinly cut or sliced up zucchini;
about 3 medium
1 md Onion; cut or sliced up
2 tablespoon Butter or margarine
One fourth cup Grated Parmesan cheese
1 One half pound Lean ground beef
1 tablespoon Flour
1 teaspoon Salt
1/8 teaspoon Pepper
2/3 cup Ketchup
One fourth cup Grated Parmesan cheese
In large skillet, saute zucchini and onion in butter until onion is tender.
Pour into baking dish (10x6x1 1/2"); sprinkle with One fourth cup Parmesan cheese;
set aside. In same skillet, brown ground beef; drain excess fat. Stir
flour, salt, pepper, then ketchup into meat. Spoon meat mixture evenly over
zucchini. Cover; bake in 350 oven 20 minutes. Remove cover; top with 1/4
cup Parmesan cheese; bake, uncovered, and additional 5 minutes or until
cheese is lightly browned. Cut into squares to serve. Makes 6 servings.
