Recipe - Beef Tortilla Casserole

Basic Red Sauce; *
One half cup Vegetable Oil
1 pound Ground Beef
One half cup Onion; Chopped, 1 Medium
8 ounce Cheddar Cheese; Shreeded, 2C
Southwest Guacamole; **
10 Corn Tortillas; ***
2 Anaheim Chiles; ****
15 ounce Pinto Beans; Drained, 1 cn
GARNISHES
Dairy Sour Cream

*** Tortillas should be 6 to 7inches in diameter and be cut into
**** Chiles should be seeded and finely chopped.
Prepare Basic Red Sauce and Southwest Guacamole; set aside. Heat oil in
10inch skillet until hot. Cook tortilla strips in oil until light golden
brown, about 1 minute; drain. Cook and stir grond beef, chiles, and onion
until beef is brown; drain. Heat oven to 350 degrees F. Arrange tortilla
strips in bottom of greased rectangular baking dish 13 X 9 X 2inches.
Top with beef mixture, Basic Red Sauce, beans, and cheese. Bake until hot
and bubbly, 25 to 30 minutes. Serve with Southwest Guacamole and Sour
Cream.
