Recipe - Beef Stew In Beer

50 g Butter; unsalted
2 pound Diced topside of beef
One fourth teaspoon Ground coriander
4 Shallots; minced
2 Sprigs thyme
1 Three fourths pt Newcastle brown ale
2 tablespoon Flour
2 tablespoon Dijon mustard
Fry off the shallots in the butter. Add the beef and brown for 45
minutes. Add the flour and cook. Add the coriander and thyme and
mustard. Add the beer and cover the meat. Simmer gently for 11/2
hours approximately. Remove the meat and keep warm.
Strain the sauce and serve. Accompany with sweet potato pie.
