Recipe - Beef Pizza Subs

1 tablespoon Olive oil
2 cup Mushrooms, cut or sliced up
1 Green bell pepper, cut into
thin strips
1 md Onion, cut into thin wedges
1 lg Clove garlic, minced
1 teaspoon Dried basil or oregano
One fourth teaspoon Red pepper flakes
1 One half cup Thinly cut or sliced up cooked flank
steak or 6 oz. deli roast
beef, cut into strips
Three fourths cup Pizza sauce or tomato pasta
sauce
Salt and pepper
4 Crusty rolls (8 inch length)
6 ounce Thinly cut or sliced up mild provolone
or mozzarella cheese
In a large nonstick skillet, heat oil over mediumhigh heat. Add
mushrooms, green pepper, onion, garlic, basil and red pepper flakes;
cook, stirring, for 5 minutes or until softened. Stir in beef and
pizza sauce; cook until heated through. Remove from heat; season
with salt and pepper to taste.
Cut rolls along 1 side and open; layer with cheese slices. Place on
baking sheet under preheated broiler for 1 minute or until cheese
melts. Watch carefully. Spoon beef mixture into rolls. Yield: 4
