Recipe - Beef Noodle Casserole

1 pack (6 oz.) Light 'n Fluffy®
Noodles medium; uncooked
1 pound Ground beef
One half cup Chopped onion
One half teaspoon Dried thyme leaves
Salt and pepper to taste
Three fourths cup (4oz. can) cut or sliced up
mushrooms; drained
1 Three fourths cup (141/2oz. can) whole
tomatoes; undrained,
chopped
One half cup Dairy sour cream
1 cup (4 oz.) shredded mozzerella
cheese
Heat oven to 350F. Cook noodles according to package directions for 3
minutes; drain. Meanwhile, in large skillet, cook meat and onion; drain.
Stir in thyme, salt and pepper; place in large bowl. Add mushrooms,
tomatoes, sour cream and noodles. Spoon mixture into 2quart casserole;
sprinkle with cheese. Bake, uncovered,30 minutes or until hot and bubbly.
