Recipe - Bayou Chicken Bake

4 To 6 Perdue Individually
Frozen boneless, skinless
chicken breasts
1 One half To 2 tsp. Cajun or Creole
seasoning
One half cup Chopped onion
1 cup Uncooked regular longgrain
rice
1 pack (16 oz.) frozen blackeyed
peas
2 cn (14 One half oz. each)Cajunstyle
stewed tomatoes
2 tablespoon Chopped fresh parsley
Preheat oven to 350øF. Lightly grease 13x9 inch baking dish. Sprinkle
chicken with Cajun seasoning; place in baking dish. In large bowl, combine
onion, rice, blackeyed peas and tomatoes. Pour over chicken. Cover and
bake 45 minutes. Uncover and bake 15 minutes longer, or until chicken is
cooked through. Sprinkle with parsley before serving. Makes 4 to 6
