Recipe - Bayou Catfish

2 pound Catfish fillet
Tabasco
Pepper and salt to taste
3 Eggs; beaten
1 One half cup Corn meal
Cooking oil
REMOULADE SAUCE
One half cup Chopped onion
Three fourths cup Oil
One fourth cup Tarragon vinegar
2 teaspoon Salt
One half cup Brown Creole mustard
2 teaspoon Paprika
Three fourths cup Cayenne pepper
2 md Cloves garlic; pressed
One half cup Green onion
Rub fish with Tabasco, salt and pepper. Set aside for an hour. Then dredge
in corn meal. Fry quickly in deep fry for 34 minutes or until golden
brown. Serve with cocktail sauce or Remoulade Sauce. Blend onion, vinegar,
mustard, paprika, pepper, salt and garlic in blender 5060 seconds. Add
green onions and blend One half second. Chill overnight.
