Recipe - Basil Cornbread

1 cup Cornmeal
1 cup Unbleached flour
2 tablespoon Granulated sugar
4 teaspoon Baking powder
Three fourths teaspoon Salt
One fourth teaspoon Black pepper
1 Egg white whipped
1 cup Skim milk at room
Temperature
One fourth cup Applesauce at room
Temperature
3 tablespoon Basil
Preheat oven at 350. Prepare a 8" square baking pan with cooking spray and
flour. In a mixing bowl, combine cornmeal. flour, sugar, baking powder,
salt, and pepper. In another mixing bowl, combine egg white, milk,
applesauce, and basil. Mix dry ingredients with wet ingredients just until
moistened. Spread batter into prepared pan. Bake for 18 to 22 minutes, or
until top is light golden.
