Recipe - Basic Pasta Filling

2 pound Ricotta cheese
2 cup Mozzarella cheese; grated
1 cup Parmasean cheese; grated
2 Large egg yolks
1 One half tablespoon Fresh garlic; minced
1 tablespoon Dry oregano
1 tablespoon Dry basil
To Taste kosher salt
To Taste black pepper
1. Combine all ingredients.
VARIATIONS:
***add 20 ounces of frozen spinach, well wrung out.
***add 1 cup finely chopped proscuitto
***add One half cup chopped, cooked pancetta or hot ham
*** substitute different herbs
*** Be Creative & have Fun!!!!!!!
