Recipe - Barley-Amaranth Waffles

1 cn (13 Oz) Vegetable Broth
1 1/3 cup Water
One fourth teaspoon Salt
1 cup Pearled Barley
1 lg Clove Garlic; peeled &
flattened
Three fourths teaspoon Salt
One fourth teaspoon Pepper
One fourth cup Olive Oil
3 tablespoon Red Wine Vinegar
2 cup Green Peas; cooked
1 small Cucumber; cut or sliced up thin
5 HardBoiled Eggs; cut or sliced up
2/3 cup Nonfat Yogurt
One half cup Nonfat Mayonnaise
Combine 1st 3 ingredients and bring to a boil. Add barley to liquid and
cook 4045 minutes. Add dressing ingredients together in large bowl and let
sit. When the barley is done, discard garlic and whisk. Add barley and toss
to mix. Add peas and mix. Arrange barley on plattter and surround with
cucumber, cover with egg slices. Pass with yogurt sauce.
