Recipe - Barbecued Pork Butt

5 pound Pork butt; (up to 7)
3 tablespoon Sugar
1 tablespoon Garlic salt
2 teaspoon Seasoned salt
2 teaspoon Celery salt
2 teaspoon Onion salt
2 tablespoon Paprika
1 tablespoon Chili powder
1 tablespoon Black pepper
One half teaspoon Allspice
One fourth teaspoon Ground cloves
One fourth teaspoon Ground ginger
Combine all of the dry ingredients and blend well. Prepare the pork butt as
desired. Cook with or without the bone. Trim the cap fat. Season all over
with the seasoning mixture. Rub in if desired. Cook on a covered, medium
hot grill with a water pan for 7 to 10 hours.
