Recipe - Barbara Billingsleys Sweet Potato Casserole

4 pound Cooked yams
One half cup Butter; melted
3 Eggs; slightly beaten
2/3 cup Orange juice
1/3 cup Brown sugar; packed
One fourth cup Brandy
1 tablespoon Grated lemon peel
1 teaspoon Cinnamon
One half teaspoon Salt
Beat cooked yams with electric mixer, adding melted butter add remaining
ingredients and beat until smooth butter a 2 quart casserole and spoon in
the mixture bake at 350 degrees for 45 minutes or until set. MC
