Recipe - Banana And Sultana Cake

5 lg Bananas; peeled (weighing
approx. 1 pound 3 oz)
2 Eggs; beaten
6 ounce Brown sugar; (150 g)
4 ounce Raisins; (100 g) (original
called for "sultanas")
8 ounce Selfrising flour; (200 g)
Mash bananas; add eggs, sugar and sultanas and then mix in the flour. Bake
in a lined 2 pound loaf tin or cake tin for 1 One fourth hours at 180 C, 350 F or Gas
Mark 4. Store in an airtight tin for 24 hours before serving. Suitable for
freezing.
1 serving = One half inch thick slice.
