Recipe - Banana Poppy Seed Muffins

2 md Ripe Bananas; peeled
1 Egg
Three fourths cup Sugar
One fourth cup Vegetable oil
2 teaspoon Orange Peel; grated
2 cup Allpurpose flour
1 One half tablespoon Poppy seeds
2 teaspoon Baking powder
One half teaspoon Salt
CITRUS GLAZE
1 One fourth cup Powdered Sugar
One fourth cup Orange Juice
1 teaspoon Orange Peel; grated
1 teaspoon Vanilla
Puree bananas in blender (1 cup). In medium bowl, mix bananas, egg, sugar,
oil and orange peel until well blended. In large bowl, combine flour, poppy
seeds, baking powder and salt. Stir banana mixture into flour mixture until
evenly moistened. Spoon batter into greased 2 One half inch muffin cups. Bake in
375 degrees oven 20 minutes or until wooden pick inserted in center comes
out clean. Remove from pan; cool on wire rack. Top with Citrus Glaze while
warm. Makes 12 muffins.
CITRUS GLAZE: In medium bowl, combine powdered sugar, orange juice, grated
orange peel and vanilla until smooth.
