Recipe - Banana Orange Muffins

4 Egg whites
2 lg Bananas; mashed
1/3 cup Corn syrup
1 One half cup 1% lowfat milk; * see note
2 tablespoon Vegetable oil
1 teaspoon Vanilla
2 tablespoon Orange peel; grated
3 One half cup Flour
1/3 cup Sugar
4 teaspoon Baking powder
1 teaspoon Baking soda
One half teaspoon Salt
1 teaspoon Cinnamon
1 cup Raisins
Preheat oven to 400 degrees. Grease muffin tins. Using a whisk combine all
wet ingredients including orange peel. In a separate bowl combine dry
ingredients, mixing well. Add dry ingredients to egg mixture stirring just
until combined. Fill muffin tins 2/3 full. Bake for about 20 mins. or until
done. Cool 5 mins. and then remove from pans. * use One half orange juice
