Recipe - Banana Nut Bread 4

One half cup Sugar; *Note
1 tablespoon Lowfat Margarine; **Note,
Softened
One fourth cup Egg Beaters® 99% Egg
Substitute; Or Equiv To 1
Egg
Three fourths cup Nonfat Milk
1 cup Bananas; Mashed
3 One half teaspoon Baking Powder
1 teaspoon Salt
Three fourths cup Nuts; ***Note, Chopped
3 cup Flour
*NOTE: Original recipe used 1 C
**NOTE: Original recipe used 2 T shortening
***NOTE: Original recipe used the nuts...I omitted
Preheat oven to 350 deg F.
Spray nonstick baking spray in 9 x 5 x 3" loaf pan. Mix sugar, lowfat
margarine (shortening), egg and mashed bananas thoroughly. Stir in milk.
Measure flour by diplevelpour method or by sifting. Blend dry
ingredients; stir in. Blend in nuts. Pour into pan. Bake 60 70
minutes, or until toothpick stuck into center comes out clean. (Crack in
top of loaf is characteristic.) Cool thoroughly before slicing with a thin
sharp knife.
