1 One half cup Mashed banana (about 3
large)
One fourth cup Molasses

Here's another winner from Sandra Woodruff's Secrets of Fatfree Baking.
Moist, not rubbery, delicious.

1. Combine dry ingredients and mix well till combined. Add remaining
ingredients, stir till dry igredients are just moistened.

2. Coat an 8x4 loaf pan with nonstick cooking spray. Spread mixture
evenly in the pan, and bake at 325 F for 4045 minutes, or just until a
wooden toothpick inserted in the ceneter of the loaf comes clean.

3. Let sit in pan for ten minutes, then cool completely on a wire rack.
