Recipe - Baked Stuffed Flounder

1 tablespoon Olive oil
One half cup Finely minced onion
1 Clove garlic; minced
One fourth cup Minced celery
One fourth cup Minced carrot
One fourth cup Minced red pepper
One fourth teaspoon Salt; pepper, thyme
4 lg Flounder fillets
1 tablespoon Grated parmesan
1 tablespoon Mayonnaise
One half teaspoon Dijon mustard
1 tablespoon White wine
In medium skillet, heat oil and saute' onion, garlic, celery, carrot, and
pepper 57 minutes. Sprinkle with salt, pepper, and thyme. Spoon equal
amounts on each fillet. Roll fish to enclose stuffing. Lay seam side down
in shallow baking dish. In small bowl, whisk together parmesan, mayonnaise,
mustard and wine. Spread over fillets. Bake 20 minutes at 400 degrees.
Serves 4
