Recipe - Baked Spinach Egg Nests

4 sl Canadian bacon
8 Fresh spinach leaves
approximately
4 teaspoon Butter
8 Eggs
Salt & pepper to taste
4 teaspoon Shredded cheddar cheese
Wash, dry, and remove stems from spinach. Stack leaves and roll up tightly,
then slice in narrow strips. Put 1 teaspoon butter in each of 44oz baking
cups. Add about One fourth of the spinach, then about One fourth of the bacon. Break 2
eggs on top of each nest, then top each egg with 1 teaspoon cheese. Place
baking dishes on a cookie sheet and bake in a preheated 325 oven for
approximately 1520 minutes.
