4 tablespoon Butter; softened
2 Scallions; chopped
2 Cloves garlic; crushed
1 teaspoon Lemon juice
1 teaspoon Dried thyme
One half teaspoon Salt
One fourth teaspoon Freshly ground pepper
3 pound Chicken; cut up
1. Preheat oven to 350 degrees. In small bowl, blend together butter,
scallions, garlic, lemon juice, thyme, salt, and pepper. 2. Arrange
chicken, skin side up, in a 13 x 9 x 2inch baking dish. Spread seasoned
butter over chicken. Bake 50 minutes, or until tender, basting occasionally
with pan juices.
