Recipe - Baked Fried Potatoes

2 lg Baking potatoes
1 tablespoon Olive oil
One half teaspoon Paprika
One fourth teaspoon Salt
Scrub 2 large (810 oz) baking potatoes. Cut each in half lengthwise. Cut
each half into 4 spears. Place potatoes in large pot of lightly salted
boiling water, bring water back to boil and boil 3 minutes. Drain in
colander.
Spray cooking sheet with cooking spray.
Mix 1 Tablespoon olive oil and potatoes in bowl.
Mix One half teaspoon paprika and One fourth teaspoon salt together, toss over
potatoes. Mix well.
Bake in preheated 400 oven for 15 minutes or until tender.
Place in paper towel lined basket or bowl. Toss gently with 1 tablespoon
graded Parmesan Cheese. Serve hot.
Makes 2 servings Can add other spices to salt mixture for different
flavors.
