Recipe - Baked Fish With Potatoes

4 pound Filet of fish
1 Green pepper, chopped
3 Garlic cloves, chopped
3 Bay leaves
1 cn Stewed tomatoes, pureed
2 lg Onions, chopped
4 Celery stalks, chopped
One half Bunch parsley, chopped
x Pinch of sugar
6 Potatoes, cutup
x Olive oil
Saute onions, pepper, celery, garlic, and parsley in olive oil. Add blended
tomatoes and bay leaves. Cook approximately for 1 hour, add sugar. Oil a
roasting pan, season the fish with salt and pepper. Place fish in pan with
cutup potatoes. Pour sauce over potatoes and fish. Bake for approximately
1 hour. Basting every 15 minutes.
