Recipe - Baked Cod And Vegetables

4 6ounce cod fillets
1 lg Tomato; cut or sliced up
1 md Cucumber; cut or sliced up
1 tablespoon Plus 1 tsp. olive oil
1/3 cup Onion; chopped
1 Clove garlic; minced
One half Green bell pepper; chopped
2 tablespoon Parsley; chopped
One half teaspoon Marjoram; or 1 Tbs. fresh,
chopped
Prep: 10 min, Cook: 25 min.
Preheat oven to 375øF. Arrange fish fillets in an oiled baking dish.
Arrange tomato and cucumber slices over each fillet. Heat oil in a heavy
saucepan over medium heat. Saut‚ onion, garlic and bell pepper until onion
is tender. Do not brown. Remove from heat. Stir in remaining ingredients.
Spoon mixture over fillets. Bake 20 minutes or until fish flakes easily.
