Recipe - Baked Cheese Grits

One half teaspoon Salt
2 2/3 cup Water
2/3 cup Hominy grits, quickcooking
2 tablespoon Butter or margarine
6 ounce American cheese, shredded
2 Eggs; beaten
1/8 teaspoon Pepper
Preheat oven to 350 F (moderate)
Grease a 2quart baking dish.
Add salt to water. Bring to a full, rolling boil. Add grits; return to
boiling point. Cook, stirring constantly, until very thick, about 6
minutes.
Remove from heat. Add fat. Mix cheese, eggs, and pepper. Stir into
grits. Pour into baking dish. Bake 40 minutes or until lightly browned.
