Recipe - Baked Cauliflower

1 Head cauliflower; broken
into flowerets
1 One half cup Drained; canned tomatoes
One half cup Chopped onion
One half teaspoon Dried oregano
One half teaspoon Salt
1/8 teaspoon Pepper
Three fourths cup Grated or shredded cheese
Three fourths cup Coarse cracker crumbs

Cook cauliflower 20 minutes, until just tender. In greased 2quart
casserole combine tomatoes, onion, oregano, salt and pepper. Cover with
cauliflower. Mix cheese and crumbs; sprinkle over cauliflower. Bake in 400
degree oven for 20 minutes. Makes 6 to 7 servings.
I've been making this recipe since 1960. The oregano steps up the bland
taste of the cauliflower.
