Recipe - Baked Catfish Creole

Ingredients:

2 pound Catfish fillets
Salt and pepper to taste
Three fourths cup Thin cut or sliced up onion
2 tablespoon Butter
1 cup Mayonnaise
One fourth cup Dijon mustard
2 tablespoon Lemon juice
One half teaspoon Tabasco
One fourth cup Chopped parsley

Preheat oven to 350. Arrange fish in shallow baking dish. Salt and pepper
liberally; cover with cut or sliced up onions and dot with butter. Bake 20 minutes or
until fish flakes easily. Mix mayonnaise, mustard, lemon juice, and
tobasco. Pour over fish and broil 2 to 3 minutes until brown and bubbly.
Sprinkle with parsley and serve hot with lemon wedges.
