Recipe - Bacon And Cheddar Pancakes

1 cup Flour
1 cup Cornmeal
1/3 cup Sugar
1 teaspoon Salt
1 teaspoon Baking soda
3 lg Eggs
2 cup Buttermilk
One half cup Plain yogurt
One fourth cup Unsalted butter; melted
2 cup Mild cheddar cheese; grated
1 pound Cooked bacon; crumbled
1. In large bowl, whisk together flour, cornmeal, sugar, salt and baking
soda.
2. In another bowl, whisk together eggs, milk, yogurt and butter. Whisk
into flour mixture just until combined.
3. Heat griddle over med heat (350F). Preheat oven to 200F if you want to
hold pancakes.
4. Pour One fourth cup of batter, forming 4" rounds and sprinkle 1 tbsp of cheese
and bacon onto each pancake. Cook until golden, 12 mins on each side.
Serve with cheese and syrup.
