Recipe - Autumn Muffins

WET MIX
One half cup Margarine
One half cup Sugar
One fourth cup Treacle (or molasses; not
blackstrap)
2 Eggs
1 One half cup Pumpkin puree (see note)
One half cup Orange puree (1 orange
pulped in a whiz; skin &
all)
One half cup Pecan nuts
One half cup Dried apricots
One half cup Sunflower seeds
1 cup Chopped raisins
DRY MIX
1 cup Rolled rye or rolled oats
3 cup Selfraising flour
2 teaspoon Powdered ginger
Preheat oven to 350øF, prepare pans. Blend the margarine, sugar & treacle.
Beat in eggs, pumpkin & orange. Mix in the remaining wet mix ingredients.
Add the dry mix & mix well. Spoon into pans & bake for 3035 mins. Makes
1518.
NOTE: To make 1One half cups pumpkin puree, cook 1 pound pumpkin in 1/3 cup of
water.
