Recipe - Autumn Cheesecake

1 cup Graham cracker crumbs
3 tablespoon Sugar
One half teaspoon Cinnamon
One fourth cup Margarine; melted
16 ounce Cream cheese; softened
One half cup Sugar
2 lg Eggs
One half teaspoon Vanilla
4 cup Thinly slied peeled apples
1/3 cup Sugar
One half teaspoon Cinnamon
One fourth cup Chopped pecans

Combine crumbs, sugar, cinnamon and margarine, press onto bottom of 9inch
springform pan. Bake at 350øF., 10 minutes. Combine cream cheese and
sugar, mixing at medium speed on electric mixer, until well blended. Add
eggs, one at a time, mixing well after each addition. Blend in vanilla,
pour over crust. Toss apples with combined sugar and cinnamon. Spoon apple
mixture over cream cheese layer; sprinkle with pecans. Bake at 350øF., 1
hour and 10 minutes. Loosen cake from rim of pan; cool before removing rim
of pan. Chill.
VARIATION: Add One half Cup finely chopped pecans with crumbs for crust.
Continue as directed.
