Recipe - Asparagus Souffle

One fourth cup Butter or margarine
One fourth cup Flour
One fourth teaspoon Salt
1/8 teaspoon Pepper
1 cup Milk
4 Eggs; separated
1 cup Finely chopped asparagus
cooked; well drai
With butter, flour, and milk, make a smooth gravy. Remove from heat and add
egg yolks, blend. Stir in asparagus. Beat egg whites until stiff; carefully
fold into mixture. Bake in a greased 2quart baking dish (straight sided)
in preheated oven 3040 minutes at 375 degrees, or until puffed and knife
inserted will come out clean. Serve at once. Makes 4 servings. Other
vegetables may be substituted for the asparagus.
