Recipe - Asian Noodle Salad With Chiles And Peanuts

1 pound Dried soba noodles or
spaghetti
One fourth cup Oriental sesame oil
One fourth cup Soy sauce
2 tablespoon Sugar
1 One half tablespoon Balsamic vinegar or red
wine vinegar
1 cup Cilantro; chopped
8 Green onions; thinly cut or sliced up
3 Jalapeno peppers; seeded
and chopped
1 One half cup Dry roasted peanuts,
lightly salted; chopped
coarsely
lightly salted;
chopped coarsely
lightly
salted; chopped coarsely
Cook noodles or spaghetti until just tender. Drain. Rinse with cold water
until cool. Drain well. Transfer to large bowl. Combine sesame oil, soy
sauce, sugar, vinegar and salt in small bowl. Stir to dissolve sugar. Add
to noodles. Add choppped cilantro, chiles, and onions. Mix well. Sprinkle
peanuts over individual salads.

NOTES : Can be prepared 1 day ahead. Cover and refrigerate. Sprinkle
chopped peanuts over salad at serving time.
