Recipe - Aromatic Vinegar

12 Coriander seeds, whole
6 Cloves, whole
6 Allspice, whole
1 Cinnamon stick, approx 3
inches long
1 small Red chili, dried
1 Ginger, 1 inch slice, fresh
1 qt Vinegar, red wine or cider
Place all ingredients in quart jar or bottle; seal. Store in dark, cool
location for at least 3 weeks.
Use to make tangy salad dressings or to make meat marinades. Also good to
flavor sauteed fruits.
