1 Tomato; minced
1 Fresh jalepeno or Serrano
chiles; very finely minced
; (seeds and fiber
; left in for heat),
; up to 3
One half lg Onion; minced finely
One half Green pepper; minced finely
One half Red pepper; minced finely
One half cup Cooked blackeyed peas; well
drained,
; optional, up to 1
Fresh corn kernels cut or sliced up
from 1 cob corn; optional
Leaves from 1 bunch
cilantro; minced medium fine
One half teaspoon Salt; up to 1
1 Lemons; Juice of, up to 11/2
Toss all ingredients together, starting with lesser amounts of hot
pepper, salt, and lemon. Taste. Add additional heat, salt, or lemon,
to taste. Serve, raw, as accompaniment.
Yield: 1 Three fourths to 2 One half cups
