Recipe - Apricot Pork Medallions

1 pound Pork tenderloin medallions;
cut 1 " thick
1 tablespoon Butter; plus
1 teaspoon Butter
One half cup Apricot jam
2 Green onions; cut or sliced up
One fourth teaspoon Dried mustard
1 tablespoon Cider vinegar
Buttered noodles
Flatten medallions slightly. Heat 1 Tablespoon of butter over MediumHigh
heat in a skillet. Saute pork about 2 minutes on each side. Remove from
pan. To juice, add 1 tsp. buitter, apricot jam, green onions, mustard and
cider vinegar. Cover and simmer for 34 minutes. Add prok to heat through.
Serve with buttered noodles. and green salad.
