Recipe - Apricot Chicken Roll-Ups

3 tablespoon Seasoned dried bread crumbs
4 3oz skinless boneless
chicken breasts; pounded
thin
2 teaspoon Canola oil
One fourth cup Apricot spreadable fruit;
melted

Preheat broiler. Spray broiler pan with nonstick cooking spray.
Place bread crumbs on large sheet of wax paper. Brush 1 side of each
chicken breast with One half teaspoon of the oil; place oiledside down on bread
crumbs, pressing firmly to coat.
Brush uncoated side of each chicken breast with onefourth of the
spreadable fruit. Rol breass to enclose fruit; secure with wooden
toothpicks. Place chicken rolls in prepared broiler pan; broil 4" from
heat, 68 minutes, until cooked through.
EACH SERVING PROVIDES: One half fat, 1 fruit, 2 proteins, One fourth bread
PER SERVING: 178 calories; 20g protein; 4g fat; 14g carbohydrate; 15 mg
calcium; 204mg sodium; 49mg cholesterol; 9 g dietary fiber
