Recipe - Applesauce Fruitcake

1 One half cup Sweetened applesauce
One half cup Shortening
1 cup Sugar
1 pack (8 ozs.) pitted dates;
cut or sliced up
4 ounce Chopped pecans
One half pound Red cherries; halved
One half pound Green cherries; halved
2 cup Raisins
2 One fourth cup Allpurpose flour
2 teaspoon Baking soda
1 tablespoon Cinnamon
One fourth teaspoon Allspice
One half teaspoon Salt
Grease and flour a tube pan and set aside. Combine applesauce, shortening
and sugar together in a saucepan. Bring to a boil; boil for 5 minutes,
stirring occasionally. Combine fruit and nuts in a large bowl, adding
flour, soda, salt and spices and stir together. Fold in cooked mixture
until well moistened. Pour into the prepared pan and bake at 275 degrees
for 2 hours or until done.
Cool on a wire rack for 10 minutes. Remove from pan and cool completely.
Yield:
1 fruitcake
