Recipe - Apple And Oat Bran Muffins (Ovo Lacto)

MIX & SET ASIDE
1 One fourth cup Whole wheat flour
1 cup Oat bran
1/3 cup Packed brown sugar
2 One half teaspoon Baking powder
One fourth teaspoon Baking soda
One fourth teaspoon Salt
One fourth teaspoon Ground nutmeg
One fourth teaspoon Ground cinnamon
COMBINE
1 cup Low/nonfat buttermilk
2 Egg whites'
2 tablespoon Oil replacement (applesauce,
Prune puree, etc)
ADD
Three fourths cup Shredded, peeled apple
Combine dry ingredients. Mix wet ingredients in a small bowl. Add to wet
ingredients to dry ingredients until just moistened.
Mix apple into batter.
Spray muffin cups with nonstick spray and spoon about One fourth cup batter into
each muffin cup. Bake in a 375 F oven for 1820 minutes or until a
toothpick inserted near the center comes out clean. 12 Muffins.
NOTE: can store batter, tightly covered, in the fridge for up to 5 days.
