Recipe - Apple Poppy Seed Muffins

1 One half cup All purpose flour
1 cup Whole wheat flour
One half cup Brown sugar, packed
4 teaspoon Baking powder
1 teaspoon Salt
1 One half teaspoon Ground cinnamon (I like
cinnamon so I used 2
teaspoons) (up to 2)
1 tablespoon Poppy seeds
2 Eggs (or egg substitute
equivilant)
1 One half cup Applesauce
1 teaspoon Vanilla extract
One fourth cup Oil
Combine applesauce, eggs, oil, and vanilla in small bowl; mix well. In a
seperate bowl mix flours, brown sugar, baking powder, salt, cinnamon and
poppy seeds. Add wet ingredients to dry ones; stirring until just
moistened. Spoon batter into greased muffin tins, filling 2/3 full. Bake at
400 F for 1215 minutes.
