Recipe - Apple Pecan Pancakes

1 cup Flour
2 tablespoon Brown sugar
2 teaspoon Baking powder
One half teaspoon Salt
One half teaspoon Cinnamon
Three fourths cup + 2 tbls milk
2 Eggs; separated
1 teaspoon Vanilla extract
One half cup Apples; peeled, chopped fine
One half cup Pecans; chopped
In a bowl, combine flour, brown sugar, baking powder, salt and cinnamon.
Stir in milk, egg yolks, and vanilla. Add apple and pecans. Beat egg whites
until stiff peaks form; fold into batter. Pour batter by One fourth cupfuls onto a
hot greased griddle or skillet. Turn when bubbles begin to form and the
edges are golden. Cook until the second side is golden. Serve with Apple
Spice Syrup.
