Recipe - Apple Pecan Cake

2 Eggs
2 teaspoon Cinnamon
2 cup Sugar
One half teaspoon Salt
1 teaspoon Vanilla
1 cup Chopped pecans
One half cup Oil
4 cup Finely chopped apples with
skin
2 cup Unbleached flour
2 teaspoon Baking soda
Beat eggs with sugar and vanilla until smooth, then beat in oil. Separately
combine flour, soda, cinnamon and salt, then stir into moist ingredients.
Fold in pecans and apples and spoon into a buttered 8by12inch baking
dish. (The batter is quite thick, but the cake turns out very moist). Bake
in a 350 degree oven for about an hour.
