Recipe - Apple Pancake

1 One half pound Granny Smith Apples
4 tablespoon Butter
One fourth cup Brown Sugar
1 teaspoon Cinnamon;Ground, divided
One half teaspoon Nutmeg; ground
6 lg Eggs; room temp.
1 One half cup Milk
1 cup Flour
3 tablespoon Sugar
1 teaspoon Vanilla Extract
One half teaspoon Salt
Peel, core and cut apples into One fourth inch thick slices (to make about 4
cups.) In 9 x 13 pan, melt butter in oven at 375 deg. Arrange apple slices
over melted butter in dish. Continue baking until apples are soft, about 10
minutes. In small bowl, mix brown sugar with One half teaspoon of the cinnamon
and nutmeg. Remove pan from oven; sprinkle apple with sugar mixture; set
aside. In blender or food processor fitted with a metal blade, blend eggs,
milk, flour, sugar, vanilla, salt an remaining One half teaspoon cinnamon. Blend
until smooth, about 30 seconds. Pour over apples in baking pan. Return pan
to oven; bake at 375 deg 35 minutes, or until top is golden brown and
apples rise to surface. Remove from oven and sprinkle with powdered sugar.
Serve warm.
Makes 8 servings.
