Recipe - Apple Oatcakes

OATMEAL MIX
Three fourths cup Oatmeal
2 cup Hot water
Three fourths cup Butter
2 Chopped; (unpeeled) yellow
or green apples (add just
before cooking), up to 3
SUGAR MIX
1 One half cup Brown sugar
3 Eggs
REST
2 cup Flour
1 cup Wheat germ
1 One half teaspoon Cinnamon
1 One half teaspoon Baking soda
1 One half teaspoon Baking powder
1/8 teaspoon Vanilla
1/8 teaspoon Nutmeg
CREAM FRAICHE
1 cup Heavy cream; (do not use
ultrapasteurized)
1 tablespoon Buttermilk
Mix & Cook 20 minutes:
Mix oatmeal mix ingredients.
Beat together sugar mix.
Add the rest to cooked oatmeal mixture along with brown sugar and eggs.
Cook on griddle like pancakes, batter will be thick, spread around a little
with spoon.
Serve with cream fraiche, chopped walnuts and maple syrup.
Cream Fraiche:
Mix 1 cup heavy cream (do not use ultrapasteurized) and 1 T. buttermilk.
Let stand, uncovered, at room temp. for 24 hours then refrigerate.
