Recipe - Apple Mint Chutney

2 lg Lemons
6 cup Apples peeled and
Chopped
6 cup Onions chopped
3 cup Tomatoes peeled and
Diced
2 One half cup Sugar
2 cup Cider vinegar
1 One half cup Raisins
2/3 cup Fresh mint lightly
Packed
One fourth cup Fresh parsley chopped
One half teaspoon Salt
One half teaspoon Cinnamon
pn Cayenne pepper
Pare outer rind from lemons and cut in thin strips. Squeeze and strain
lemons into stainless pan. Stir in remaining ingredients; bring to boil.
Reduce heat to low; simmer for 1 One half hours or until thickened. Fill and
seal jars according to Bath Basics.
