Recipe - Apple Lokshen (Noodle) Kugel (Sweet)

8 ounce Medium Egg Noodles
One fourth cup Melted Margarine or oil
4 Eggs, beaten
3 md Apples
One fourth cup Dark Seedless Raisins
One fourth cup Sugar
1 One half teaspoon Salt
2 teaspoon Cinnamon
One half teaspoon Vanilla
Cook and drain noodles and put in a large bowl. Stir in margarine and eggs.
Peel and chop apples. If using raisins, rinse in hot water and drain.
Combine all ingredients together, add seasoning and mix well. Preheat oven
to 350 deg F. Pour kugel mixture into a greased 9" x 13" baking pan. Bake
for 4060 minutes or until lightly browned. Makes 12 servings. Note: for
extra softness, add another 2 eggs.
Variation: Pineapple Kugel Replace apples and raisins with one 16 ounce can
crushed pineapple..Add an additional 1/2Three fourths cup of sugar and 1 tbs
cinnamon.
