Recipe - Apple Fig Muffins

2/3 cup Flour
3 teaspoon Baking powder
One half teaspoon Salt
4 Egg whites
One half cup Sugar
One half cup Brown sugar
3 teaspoon Vanilla
3 cup Apples, cut fairly small,
Skins on is fine.
Beat eggs, add sugar and vanilla and beat well. Add dry ingredients and
mix. Dump in apples and stir until evenly distributed. Bake in a deep
baking dish, 45 minutes at 350. Serve with custard.
